Origin and Processing
It grows in Nyamasheke District, in Rwanda’s Western Province, within Kanjongo Sector, an area where altitude and the work of many smallholders help create a cup with clear fruit, solid structure, and strong definition. The lot comes from 603 smallholder farmers with catchment areas between 1830 and 1950 m, and is processed at Coproca.
The natural process enhances the sweeter and riper side of the profile. After careful cherry selection, defects are removed by flotation, and the dense cherries are dried on fine-mesh tables under shade, being turned every 30–40 minutes. Drying takes 35 to 40 days to reach about 11.5% moisture, helping preserve both cleanliness and aromatic clarity.
