It grows in Nuevo Vergel, a small community in La Concordia, Chiapas, within the surroundings of the El Triunfo Biosphere Reserve. The Red Maragogype variety is especially recognizable for its large bean size and is becoming increasingly rare in modern plantations.
This lot preserves a traditional line of uncrossed Red Maragogype, which gives the coffee a special value. After ripe cherry selection, the coffee is cleaned and goes through an anaerobic resting phase before drying slowly on raised beds under partial shade.
