Origin and Processing
This coffee comes from Sotará, in the Colombian department of Cauca, and combines the production of two small farms cultivated by Omar Henry Cuaji Guevara and Andrés Felipe Angulo Garrido.
The coffee trees grow between 1,900 and 2,120 m.a.s.l. This considerable elevation supports slower ripening and encourages good sugar concentration within the coffee cherries.
The Castillo variety is particularly well adapted to Colombian growing conditions. Although often associated with balanced and accessible profiles, precise cherry selection and natural processing can develop a far more intense, fruit-driven, and complex expression.
During natural processing, the coffee cherries are dried whole. Extended contact between the fruit and seed encourages concentrated sweetness, tropical aromatics, denser texture, and fermentative nuances.
In this lot, the result is a pulpy and concentrated cup in which molasses and caramel balance the tropical and funky character.
