Strawberry is immediately recognisable in the opening of the cup. It then develops into a more concentrated, compote-like sweetness accompanied by several ripe tropical fruits. Fermentation adds depth, warmth, and wine-like aromatics that become increasingly noticeable as the coffee cools.

Origin and Processing

This coffee comes from Punta Larga, near Popayán, in the Colombian department of Cauca, and is processed at Agroparque Las Villas / Área 18. The coffee trees grow at 1,780 m.a.s.l. in an environment combining coffee production, conservation, ecotourism, and more complete use of the coffee cherry.

The Castillo variety is recognised for its adaptation to Colombian growing conditions and its ability to produce sweet, structured cups. In this lot, its character is transformed through exceptionally prolonged fermentation.

The process uses coffee mosto, a naturally fermented liquid from previous coffee batches that is rich in sugars, yeasts, and beneficial bacteria. This living starter culture helps guide fermentation while building greater sweetness and complexity.

The cherries then remain inside wine barrels for 60 days. Extended time, the sealed environment, and the activity of the mosto create an extremely intense expression with ripe fruit, wine-like aromatics, and boozy depth.

Natural processing is then completed by drying the cherries whole. The result is a deeply fruit-forward and unconventional cup with enough underlying structure to distinguish the strawberry, tropical fruit, and fermentation character.
