Origin and process
This coffee comes from high-altitude regions in Honduras, where the subtropical climate and exceptionally fertile soils create ideal conditions for growing high-quality coffee. In these mountainous areas, the Arabica plants (Catuai, Typica, and Bourbon) develop slowly, concentrating natural sweetness and aromatic complexity in each cherry.
After harvesting, the beans undergo a washed processing method, which imparts clarity and purity to the cup. Subsequently, the coffee is decaffeinated using subcritical CO₂. This method employs high-pressure carbon dioxide to selectively extract caffeine without the use of chemical solvents and without significantly altering the aromatic and flavor compounds. The result is an organic decaffeinated coffee with the aroma and character of a full-bodied specialty coffee, but virtually caffeine-free.
