Origin and Processing
Crimson Cacao comes from Finca El Puente in La Paz, Honduras, a mountainous coffee-growing region with a long agricultural tradition.
The coffee is produced by Marysabel Caballero and Moisés Herrera, whose dedication to quality and careful cultivation has made their farm a recognised name in specialty coffee.
Marysabel comes from a coffee-growing family whose history stretches back to the early twentieth century. Together with Moisés, she has continued developing an approach centered on quality, careful processing, and consistent improvement.
The coffee grows between 1,500 and 1,680 meters above sea level, where mountain conditions support gradual cherry maturation and clearly defined flavor development.
The Catuai variety provides a balanced foundation for sweetness, structure, and fruit expression.
This lot undergoes Washed processing, during which the fruit pulp and mucilage are removed before drying.
This preparation encourages a clean and well-defined cup, allowing the chocolate, cranberry, and red-grape notes to remain distinct.
The result is an exceptionally balanced coffee with pleasant sweetness, a rounded body, and excellent versatility.
