In this coffee, Java does not refer to the country of origin, but to an Arabica variety that remains relatively unusual in Guatemala. Grown on the volcanic slopes of Acatenango and processed using the washed method, it is presented with a focus on clarity, precision, and elegance.

This lot is designed for coffee drinkers who enjoy exploring distinctive varieties without intense fermentation masking their natural identity. Origin, genetics, and careful farm work remain at the centre of a refined and clearly structured cup.

Flavor Profile

Provisional sensory profile, to be confirmed after the first cupping of the roasted lot:

  • Main character: clean, elegant, and defined
  • Acidity: lively and well integrated
  • Body: medium, refined, and balanced
  • Aftertaste: clean and persistent

Final tasting notes may vary according to roast development and brewing method. They will therefore be updated after the coffee has been roasted and evaluated by 98% Monkey.

Origin and Processing

This coffee grows at Finca La Soledad in Acatenango, Guatemala, at an altitude of 1,650 m.a.s.l. The farm has been connected to the Pérez family for five generations and is located in a mountain region shaped by volcanic soil and conditions that support slow cherry maturation.

The Java variety represents only a small part of the farm’s production. Its cultivation requires careful attention, precise selection, and harvesting at optimal ripeness to develop its full quality potential.

During the washed process, the fruit and mucilage are removed before drying. This encourages a more transparent expression of the origin and variety, with greater clarity and definition than natural processing or more intensive fermentation methods.
