Some coffees rely on intense fermentation to attract attention. This one follows a different path: an unusual variety, careful cultivation, and washed processing focused on clarity, balance, and the natural expression of the bean.
H1 combines strong sensory potential with resistance and productivity, although its cup quality depends heavily on precise picking at full ripeness. In the hands of the Pérez family, it develops a defined, sweet, and structured cup with an elegant personality.
Flavor Profile
- Main character: sweet, clean, and expressive
- Acidity: lively, precise, and well integrated
- Body: medium, juicy, and structured
- Aftertaste: long, sweet, and clean
Origin and Processing
This coffee grows at Finca La Soledad, located in the heart of Acatenango, Guatemala. The farm has belonged to the Pérez family for five generations and combines coffee cultivation with protected areas of natural forest.
Volcanic soil, the region’s distinctive microclimate, and an altitude of 1,650 m.a.s.l. support slow cherry maturation and a clearly defined cup structure.
H1 is a hybrid created from T5296 and Rume Sudan. Its quality potential is particularly dependent on selective harvesting and fully ripe coffee cherries.
The washed process removes the fruit and mucilage before drying, supporting a clean, transparent, and well-organised cup. The variety and origin remain at the centre of the experience, without intense fermentation masking their identity.
