Red currant brings vibrancy, white peach softens the cup, and clean sweetness holds the profile together. This washed Bourbon from Huehuetenango is precise and balanced, with enough depth to continue developing as it cools.
It is made for those who enjoy clearly defined fruit, elegant acidity, and clean cups without intensive fermentation. Its character is built around a classic variety, careful selection, and processing that allows the origin to remain transparent.
Flavor Profile
- Main notes: red currant, white peach, and sugar
- Acidity: lively, fruit-driven, and well integrated
- Body: medium, juicy, and balanced
- Aftertaste: clean, sweet, and persistent
- Overall profile: fruity, bright, sweet, and layered
The cup opens with acidity reminiscent of red currant. A more delicate white-peach character follows, supported by clean sweetness similar to cane sugar. As the coffee cools, the fruit notes become increasingly defined and layered.
Origin and Processing
This coffee comes from Finca El Injerto II in Huehuetenango, Guatemala, and is produced by Sergio Martínez. The coffee trees grow between 1,500 and 1,850 m.a.s.l., in a mountainous region whose conditions support slow ripening and good sugar concentration.
Bourbon was among the first varieties planted at the farm and remains an important part of its identity. The family-run operation combines tradition with recent improvements in daily lot separation, selective picking, and structured quality control.
During the washed process, the fruit and mucilage are removed before drying. This promotes a more transparent cup, allowing the red currant, white peach, and natural sweetness to remain clearly defined.
