Origin and Processing
It grows in Guji, one of Ethiopia’s most highly regarded regions for clarity, liveliness, and complexity in the cup. This lot is linked to the work of Gemechu Shonora and the area of Gerba, Dogo, Guji, where altitude and careful cherry selection support especially clear and expressive profiles.
After harvest, the cherries are hand sorted, pulped, and then undergo 24 to 36 hours of controlled fermentation. The coffee is then dried on African beds for around 14 days, followed by a resting period of several weeks to homogenize the lot before final preparation. The result is a very precise, clean cup with strong aromatic definition.
