Origin and Processing
It grows in Eratoi, Letefoho, in a high-altitude environment where cooler temperatures slow cherry development and help concentrate more sugars in the fruit. The coffee is processed by smallholder farmers who handle their lots individually, using traditional methods passed down through generations.
After harvest, the cherries are carefully selected, pulped, and fermented for 40 to 44 hours. The coffee is then washed through several passes and dried on raised beds for 10 to 14 days until it reaches the target moisture level. The result is a very clear, precise cup with a particularly clean profile.
