Origin and Processing
Ruby Thyme comes from Ngila Estate in Karatu, northern Tanzania, on the edge of the Ngorongoro Conservation Area.
The estate sits between 1,500 and 1,600 meters above sea level, close to cloud forest, the Ngila River, and a wildlife corridor connecting parts of the surrounding landscape.
The historic coffee estate is currently managed by Vera Stücker together with a dedicated local team.
This Geisha comes from Glenmalure, a section of Ngila Estate dedicated to specialty coffee production.
Ripe coffee cherries are harvested and sorted by hand before being depulped.
The parchment coffee then undergoes 12 hours of fermentation, followed by washing.
Finally, the coffee is spread across raised drying beds in the sun for approximately 8–13 days, depending on weather conditions.
This carefully managed Washed process allows its raspberry, floral, and thyme-like notes to remain clearly defined.
The result is a distinctive Geisha with a fresh botanical character and a delicate, tea-like texture.
