Origin and Processing

It grows in Chiapas, Mexico, on the southern slopes of the Sierra Madre, within the surroundings of the El Triunfo Biosphere Reserve. This mountain region has a long coffee tradition, where altitude and climate support coffees with good structure, sweetness, and clarity.

The Bourbon, Typica, and Catimor varieties provide a balanced and recognizable foundation. The coffee undergoes an extended washed fermentation, which helps create a cleaner cup and makes the fruity and citrus notes stand out with more clarity. After washing, the parchment is dried on open patios until stable.
