High in the mountains of Sidama, southern Ethiopia, lies Bombe, a small village where coffee farming has been part of family life for generations.
Here, at elevations between 1,900 and 2,100 metres, Mate Matosa grows the 74158 and 74110 varieties on his family farm. The cool mountain climate and distinctive growing conditions allow the coffee cherries to mature slowly, developing their individual character.
The result is a truly distinctive coffee, featuring hop-like aromatics, fresh green tea notes and a vibrant lime zest finish. An unusual, intense and beautifully complex combination that reveals a different side of Ethiopian specialty coffee.
Origin and Processing
Part of what makes this coffee so distinctive is its carefully managed processing method.
After harvesting, ripe coffee cherries are carefully selected and placed whole into airtight containers, where they undergo 96 hours of anaerobic fermentation without oxygen exposure.
The cherries are then transferred to raised African drying beds and slowly dried beneath shade nets for 30–35 days.
This extended process contributes to the development of a complex aromatic profile while preserving the coffee's distinctive character and sense of origin.
