Origin and Processing

Lime Pulse comes from Bombe Village in Bensa, Sidama, Ethiopia, a mountainous coffee-growing area celebrated for its expressive specialty coffees.

The coffee is produced by Mate Matosa, a second-generation farmer who grows and processes coffee exclusively from his own family farm.

The coffee grows between 1,900 and 2,100 meters above sea level, where cool mountain temperatures and fertile soils support gradual cherry maturation.

This lot combines the Ethiopian JARC varieties 74158 and 74110.

Its processing begins with carefully selected ripe cherries, which are placed inside airtight barrels for 96 hours of anaerobic fermentation.

After fermentation, the whole cherries are transferred to raised drying beds beneath shade nets, where they dry slowly for approximately 30–35 days.

This combination of anaerobic fermentation and extended Natural drying encourages a complex and expressive flavor profile while preserving the coffee's structure and distinctive character.

The result is an unusually aromatic Ethiopian coffee with lively citrus freshness and elegant herbal nuances.
