In the highlands of Limu, in Ethiopia's Jimma region, coffee grows beneath the shade of native trees at elevations exceeding 2,000 metres. The cool environment allows the cherries to ripen slowly, developing the delicate and complex flavours that make Ethiopian coffee so distinctive.

This coffee is the result of the collective work of 55 smallholder farmers, with processing carefully managed by Ayub at the Bedeyi Washing Station.

In the cup, expect an elegant, floral and refreshing profile with notes of bergamot and hibiscus. Its silky body, lively acidity and delicate tea-like character create a beautifully nuanced experience.

Origin and Processing

The 74110 and 74112 varieties were selected by the Jimma Agricultural Research Center (JARC) and represent part of Ethiopia's remarkable coffee diversity.

After harvesting, only ripe cherries are selected for processing. They are depulped and fermented under clean water for 35 hours before being thoroughly washed.

The parchment coffee is then dried on raised African beds for 12 days, followed by a further 48-hour resting period to allow moisture levels to stabilise.

This careful washed process highlights the coffee's aromatic clarity and delicate floral character.
