Origin and Processing

Hibiscus Breeze comes from Limu in Ethiopia's Jimma Zone, a mountainous coffee-growing region characterized by shaded, semi-forest farms.

The coffee grows between 2,000 and 2,200 meters above sea level, beneath native trees that help create a cool environment for gradual cherry maturation.

This lot brings together coffee from 55 smallholder farmers, processed at Bedeyi Washing Station under the supervision of Ayub.

The varieties include JARC 74110 and 74112, alongside traditional Ethiopian local landraces.

Only ripe cherries are selected before being depulped using disc pulpers.

The parchment coffee then undergoes 35 hours of fermentation in clean water, allowing the mucilage to loosen before the beans are thoroughly washed with fresh water.

After an initial drying stage, the parchment is transferred to raised African drying beds for approximately 12 days.

The coffee is then rested for another 48 hours to stabilize its moisture before packing.

This carefully managed Washed process allows the coffee's floral aromatics, citrus brightness, and delicate texture to remain clearly defined.
