Origin and Processing

Honey Alchemy comes from La Guaca in Chirripó, Brunca region, Costa Rica, a mountainous coffee-growing area celebrated for its expressive specialty coffees.

The coffee is produced by the Ureña Rojas family, whose family-run Café Rivense micromill allows them to carefully manage the different stages of processing.

This lot grows at approximately 1,700 meters above sea level, where mountain conditions support the development of complex and distinctive aromatics.

The Catuai variety provides a balanced foundation for sweetness, body, and fruit expression.

This coffee undergoes Honey processing with fermentation in a sealed, low-oxygen environment.

After the cherry skin is removed, some of the mucilage remains around the beans. The coffee then undergoes approximately three days of initial drying on raised beds.

It is subsequently placed in sealed containers, where fermentation continues for approximately eight days.

Finally, the coffee returns to raised drying beds for another 12 to 14 days of slow drying, until the desired moisture level is reached.

This carefully managed process creates an intense, expressive cup with concentrated sweetness, a silky mouthfeel, and impressive fruit depth.
