Origin and Processing
It grows in Timaná, southern Huila, a Colombian region with deep coffee tradition and many smallholder producers. Coffee is cultivated in diverse agroforestry systems, surrounded by native trees that help preserve local biodiversity.
The Castillo variety brings a stable, sweet, and well-structured cup. After careful hand selection, the cherries are pulped and undergo 48 hours of controlled oxidation to build more clarity and complexity. The coffee is then slowly dried on raised beds until stable.
The result is a clean, sweet, and highly versatile coffee with a classic but carefully developed expression: caramel, orange, toffee, and nut in a very approachable everyday cup.
