It grows in Cauca, one of Colombia’s most highly regarded regions for clarity and complexity in the cup. The lot is linked to Finca Santa Barbara / Area 18, where different varieties, including Striped Red Bourbon, are processed with a strong focus on precision and profile expression.
After pulping, the coffee moves into a stainless-steel bioreactor with control over oxygen, temperature, pH, °Bx, and pressure. Over 48 hours, natural yeasts transform the sugars in the mucilage into aromatic precursors that enhance the floral, fruity, and complex profile of the variety. The coffee is then washed three times. The result is a particularly defined, elegant, and highly expressive cup.
