Its washed processing incorporates carefully controlled aerobic fermentation. This preserves the clarity associated with washed coffee while adding greater aromatic depth, saturation, and fruit complexity.

Origin and Processing

This coffee comes from Finca Santa Bárbara / Área 18, located in the department of Cauca, Colombia. The coffee trees grow at 1,850 m.a.s.l., beneath native shade trees in an environment designed to support biodiversity.

Pink Bourbon is recognised for intense aromatics, bright acidity, and its ability to produce clearly defined floral and fruit-driven profiles. Fully ripe cherries and precise fermentation control are particularly important for revealing its full sensory potential.

After sorting and cleaning, the cherries are depulped and the beans are transferred into a stainless-steel bioreactor. Oxygen flow, temperature, pH, pressure, and Brix levels are controlled throughout the process.

Fermentation continues for 48 hours. The oxygen-rich environment encourages the activity of naturally occurring yeasts associated with the variety, supporting the development of aromatic precursors. The coffee is then washed three times to stop fermentation and preserve cup clarity.

The result combines the cleanliness of washed processing with deeper, more complex, and more saturated fruit expression.
