Origin and Processing
This coffee comes from El Tambo, in the Colombian department of Cauca, and combines the production of four small farms managed by Alexander Camayo Sánchez, Dabery Fernández Astudillo, Julián Gerardo Palomino Sandoval, and Pedro Fabian Olarte.
The coffee trees grow between 2,000 and 2,080 m.a.s.l. Cool temperatures and considerable elevation support slower ripening, encouraging sweetness, density, and clearly defined acidity.
The Castillo variety is well adapted to Colombian growing conditions. With careful selection of ripe cherries and precise processing, it can produce particularly clean, sweet, and balanced cups.
During washed processing, the fruit and mucilage are removed before drying. This creates a transparent and precise cup in which orange, red fruit, and spices remain clearly distinguishable.
The result is a stable and versatile coffee with enough body for espresso and clean acidity that also performs well in filter methods.
