Before you start

Ingredients for a small tart
For the base
120 g toasted nuts
80 g pitted dates
1 tablespoon pure cocoa powder
1 small pinch of sea salt
You can use almonds, hazelnuts, walnuts or a mixture. Hazelnuts pair especially well with coffee and chocolate.
For the cream
200 g dark chocolate
150 ml cream, thick coconut milk or whipping cream
1 strong double espresso
1 teaspoon natural vanilla extract
1 teaspoon honey or date syrup, optional
1 tiny pinch of sea salt
For decoration
Pure cocoa powder
Grated dark chocolate
Chopped toasted hazelnuts
A little very finely ground coffee, optional
The crunchy base
Blend the nuts with the dates, cocoa and salt until you get a moist and compact mixture.
It does not need to be completely smooth. In fact, small pieces of nuts make the texture more interesting.
Press the mixture into a small mold lined with baking paper, forming an even base. Place it in the fridge while you prepare the cream.
The coffee and chocolate cream
Break the dark chocolate into pieces and place it in a bowl.
Heat the cream or chosen alternative without bringing it to a boil. Pour it over the chocolate and let it sit for one minute. Then stir slowly until the chocolate melts and the cream becomes smooth and glossy.
Add the double espresso, vanilla, salt and, if you want a slightly sweeter finish, honey or date syrup.
Mix gently. The cream should be smooth, dark and aromatic.
Assembling and chilling
Pour the cream over the chilled base.
Smooth the surface with a spoon or spatula. It does not need to look perfect; a slightly rustic finish works beautifully.
Place the tart in the fridge for at least 4 hours. Overnight is even better. The flavor settles and the texture becomes firmer.
How to serve it
Cut into small portions. This tart is intense, so large slices are not necessary.
Before serving, add pure cocoa, grated chocolate or toasted hazelnuts on top. You can also finish with a tiny pinch of very finely ground coffee to intensify the aroma.
It pairs beautifully with a clean espresso, a soft filter coffee or even cold brew on a warm day.
