Café Bombardino: el lado alpino, dulce y potente del espresso

Caffè Bombardino: the alpine, sweet and powerful side of espresso

Some drinks are not made to be rushed. Bombardino is one of them.

Warm, creamy, sweet and powerful, it feels designed for cold days and mountain moments. Bombardino belongs to the culture of the Italian Alps. It is not a classic coffee drink, but when espresso enters the recipe, the story changes.

That is when we get what many people call Caffè Bombardino: a more intense and aromatic version of this winter drink.

Bombardino or Caffè Bombardino: not exactly the same

The classic Bombardino did not begin as a coffee drink. Traditionally, it is made with egg liqueur, brandy or rum, and often finished with whipped cream.

The coffee version adds espresso and is sometimes known as Calimero.

The basic difference is simple:

  • Classic Bombardino: egg liqueur + brandy or rum + cream
  • Caffè Bombardino / Calimero: egg liqueur + alcohol + espresso + optional cream

Espresso does not only add caffeine. It adds depth, aroma, elegant bitterness and balance against the sweetness of the liqueur.

Why coffee works so well

Egg liqueur brings a creamy, sweet and enveloping texture. Espresso brings intensity, roasted notes, body and a pleasant bitterness that cuts through the sweetness.

When well prepared, the result should not feel overly sweet or heavy. It should feel like a mix between dessert, coffee and a warm winter drink.

The secret is balance.

Too much liqueur, and the coffee disappears.
Too much alcohol, and the drink becomes heavy.
A weak espresso, and everything feels flat.

Which coffee to choose

For Caffè Bombardino, coffees with warm and structured profiles usually work best.

Look for notes such as:

  • chocolate
  • cocoa
  • nuts
  • caramel
  • panela
  • ripe fruit

An espresso with good body and natural sweetness gives the drink more depth. Coffees that are too acidic or extremely delicate may get lost between the cream, liqueur and alcohol.

For this recipe, a round espresso usually works better than a very floral one.

A simple version at home

For a simple homemade version, you can use this idea as a base:

  • 1 freshly prepared espresso
  • 40-50 ml egg liqueur, Vov, advocaat or similar
  • 15-20 ml brandy or rum
  • optional whipped cream
  • optional cocoa powder

Warm the egg liqueur gently without boiling it. Add the brandy or rum, mix in the espresso and finish with whipped cream if you want a richer and more classic version.

It does not need to be complicated. What matters is that the espresso is well prepared and the drink stays balanced.

A drink for specific moments

Caffè Bombardino is not an everyday coffee. It is closer to a warm dessert drink than to a regular espresso.

It makes sense in winter, after a meal, on a cold afternoon or as a different coffee drink to share.

It also shows something interesting: coffee does not only accompany recipes, it can give them structure.

Without espresso, Bombardino is sweeter and creamier.
With espresso, it gains depth, contrast and character.

The 98% Monkey view

At 98% Monkey, we like recipes that respect coffee, not recipes that hide it.

A good Caffè Bombardino should not taste only like liqueur or cream. The espresso should remain present, support the drink and bring the more serious, bitter and aromatic side that balances everything.

Because even in a sweet recipe, coffee can keep its identity.
