At 98% Monkey, we work with coffees selected through specialized suppliers and importers, giving priority to current lots, clear traceability, strong scores and sensory profiles that truly bring something distinctive to the cup.
We do not look for coffee just to have coffee.
We look for coffees with identity.
Each origin is chosen for its balance, sweetness, complexity, process and the way it expresses itself through different brewing methods. Some coffees work especially well as espresso. Others shine more in filter, V60, Chemex or French press. And some simply deserve to be enjoyed slowly.
Careful roasting, small batches and precision
Roasting is one of the most important parts of the process. A good green coffee can lose much of its value if it is roasted without attention, without judgment or without respect for its natural character.
That is why we work with small batches, searching for roast profiles that respect the origin and allow each coffee to show its own personality.
Not every coffee needs the same treatment.
Not every process reacts in the same way.
Not every origin expresses sweetness, acidity or body in the same manner.
Our goal is to find the point where the coffee keeps its identity while remaining clean, pleasant and balanced in the cup.
